TD9001, a 23cm / 9" steel nib from British company Taylor's Eye Witness. Designed for sharpening and levelling the cutting edges of kitchen, cooking, butchers knives. The round sharpening rod is made from a single piece of high chrome steel with a hardness of 62 HRC.
A steel nib, eagerly used by professional chefs who sharpen their knives before each use, thus preventing excessive blunting of the cutting edge.
Handle - made of hardened plastic ensures proper balance of the steel. Finished with an oval hole for hanging.
Directions for use:
1. hold the nib in your left hand and the knife in your right hand, left-handed people vice versa.
2) Guide the cutting edge with light pressure along the nib.
3. make several alternating cuts while maintaining a 16° - 20° angle between the cutting edge and the nib bar.
4. use a nib with a cutting edge at least as long as the knife head.
5. clean the sharpener after use, wipe with a damp cloth or a mild brush and dry with a towel.
