X30Cr13 is a martensitic chrome steel with a nominal chemical composition of approximately 0.30% carbon (C) and 13% chromium (Cr). The addition of chromium in this amount provides significant corrosion and rust resistance in many environments. The higher carbon content compared to some other stainless steels translates into good hardness (typically in the range of 50-55 HRC after appropriate heat treatment) and the ability to maintain sharpness. Granton Edge (also known as dimpled blade) is a distinctive oval or elongated indentation milled alternately on both sides of the blade, just above the cutting edge. This facilitates smooth cutting of thin, even slices (e.g., salmon, roast meat) with less effort.
