MAM Small Cleaver Black Polymer, Polished X39Cr13 (705)
- Small Cleaver Black Polymer, Polished, compact kitchen cleaver by the Portuguese brand MAM, designed for tasks requiring strength and precision. The robust blade and ergonomic handle guarantee effective meat portioning.
Small Cleaver Black Polymer, Stainless Steel is a handy kitchen cleaver, designed for efficient portioning of meat, poultry and firm vegetables. The brand MAM - Filmam, Lda., with over 150 years of knife production tradition in Portugal, combines durable materials with refined ergonomic design in this model. The blade made of stainless steel X39Cr13 is thicker and heavier, which makes it easier to cut through bones and divide large portions without risking damage to the blade. The massive construction of the cleaver facilitates effective power transfer with minimal user effort. The wide surface of the blade also functions as a practical spatula – ideal for collecting and moving ingredients. The high-strength polymer handle is designed for comfort, safety and heavy-duty use. Its properties make the MAM 705 a reliable, compact tool - ideal where functionality and durability count.
X39Cr13 is a martensitic chromium steel with a higher carbon content compared to X30Cr13. Its nominal chemical composition is about 0.39% carbon (C) and 13% chromium (Cr). The increased carbon content significantly increases its hardness (often reaching 55-58 HRC after quenching and tempering) and improves its wear resistance and ability to hold a blade. The addition of chromium provides good corrosion resistance, although it may be slightly lower than in steels with higher chromium content. X39Cr13 is used in the production of high-quality knives, surgical instruments with higher requirements for hardness and blade life, and other precision tools.
Blade - designed for tasks requiring power and stability. The classic cleaver shape, with a wide and heavy blade, is perfect for portioning meat, cutting through bones and chopping hard ingredients. Thanks to the large work surface, it is possible to conveniently collect ingredients from the board, which increases the pace of work. Made of high-quality stainless steel, the blade is corrosion-resistant, easy to clean and highly impact-resistant – essential in a professional kitchen. The smooth finish reduces sticking, and the lack of a classic grind emphasizes the utility of the knife – optimized for force work. The design has been developed to ensure reliability, safety and efficiency even with intensive use.
Handle - made of durable polymer plastic, resistant to moisture, grease, chemicals and high temperatures. Its properties make it an excellent choice for professional kitchen conditions, where hygiene and safety are paramount. The ergonomic profile of the handle adapts to the hand, ensuring a stable and secure grip, even with dynamic, forceful movements. The textured surface prevents slipping - even with wet or dirty hands. The closed design prevents the accumulation of dirt, making it easier to keep the knife clean. The blade is firmly embedded, making it resistant to stress and increasing the lifespan of the tool. This compact kitchen cleaver meets the highest demands in terms of functionality, comfort and durability.

Przeczytaj!
This product is intended for use only by adults with knowledge and experience in handling sharp cutting tools. Improper use of the knife can result in serious injuries. The blade is extremely sharp and can easily cut through skin and tissue; therefore, extra caution should always be exercised while cutting, and hands should be kept away from the cutting edge. To prevent the knife from slipping, it is recommended to cut on a stable, non-slip surface and avoid excessive force, which may cause uncontrolled blade movement.
Leaving the knife on the edge of a table, countertop, or in easily accessible places—especially where children are present—poses a significant safety risk. The knife should always be properly secured after use, ideally by placing it on a stable surface or storing it in designated knife blocks, protective sheaths, or magnetic strips. The knife should never be used for tasks it is not designed for, such as opening cans or prying objects, as this can damage the tool and lead to dangerous accidents.
A dull blade increases the risk of injury, as it requires more force and is more likely to slip from the material being cut. Therefore, it is essential to sharpen the knife regularly to maintain optimal sharpness. Additionally, proper cleaning and drying of the knife are necessary to prevent corrosion and bacterial growth. Periodic inspection of the handle and blade is recommended to check for cracks, chips, or looseness. If any damage is detected, the knife should be repaired or replaced immediately.
When using the knife, focus solely on the task at hand—avoid talking on the phone, watching television, or other distractions while cutting. Ensure proper lighting in the workspace for better visibility and control. Please note that some countries or regions have laws restricting the ownership and carrying of knives. Before purchasing or using this knife, verify that its use is legal in your location according to applicable regulations.
Following these safety guidelines will help ensure safe and effective knife use, minimizing the risk of accidents and extending the lifespan of the tool.
